NMSU to host gluten-free cooking, baking workshop in Albuquerque

ALBUQUERQUE ? As more and more people realize they have gluten intolerance, they are looking for ways to prepare foods that are gluten-free.


New Mexico State University?s Bernalillo County Cooperative Extension Service is offering two workshops during the ?Gluten-Free in the Kitchen? series. The workshops will be from 1:30 to 4 p.m. Tuesday, May 12, and Thursday, May 14 at the Bernalillo County Extension office, 1510 Menaul NW, in Albuquerque.

The workshop will be hands-on learning on how to cook and bake gluten-free foods.

?We receive calls asking about recipes for gluten-free baking and cooking,? said Corina Chavez, NMSU Extension home economist for Bernalillo County. ?We will discuss products that are available for cooking and baking and we will prepare several recipes each day so the participants may taste-test the recipes and products.?

The classes offer participants the opportunity to learn about gluten and how it affects the body due to an illness such as celiac disease. It also gives the participants a chance to see how gluten-free products are different in size and texture than that of products made of wheat.
